The other day I realised I have totally forgotten about juicing. I used to be in the habit of making a lovely juice for my husband and myself every (or most) mornings. We’d take it to work or kept it in our fridge and drank it during the day. But this habit moved to the background of our lives and I hadn’t given it any thought for a while (hello baby and motherhood).
But I’m ready for a bit more energy to come my way. Or I should probably say – to work on getting that energy! Winter is taking a little bit too long for my liking and I’m yearning for more sunshine and daylight. It’s also been a little challenging getting some proper sleep in with our 8 month old, so I’m feeling it. I need some extra vegetable goodness in my life to help me stay strong and healthy.
Man, I used to love this juice and it would give me all the good stuff. It’s time to bring it back!
If you haven’t been juicing before, or never tried a veggie juice, it might not sound too appealing to you at first. But trust me, you will LOVE this juice! It’s a great beginners recipe as it is full of earthy sweetness and skips the bitterness that greens might add.
First of all, there’s beetroot. I might be slightly obsessed with this vegetable. It’s colour is just so deeply beautiful & the earthy flavour so versatile. Plus, packed full of healthy things. It’s amazing for your health and energy!
Then there’s ginger. It gives this juice a proper kick and if you don’t know about it’s health benefits, it’s time to clue yourself up. It’s a natural antiviral which is a very helpful thing in winter, keeping your body strong.
Lastly, I add in some carrots and apple – both provide sweetness, balance and acidity to the juice. So yum.

Recipe: Beetroot Ginger Juice
Time: 10 min – Yield: 1 big glass*
- 1 Beetroot
- 1 Large apple
- 2 medium sized carrots
- A thumb size piece of fresh ginger
- Wash all the produce and remove stalks/roots. I personally don’t peel my veggies before juicing, but you can if you prefer. Cut them up in chunks suitable to fit your juicer.
- Juice the ingredients one by one. Add the ginger last to control the amount of heat kick. Give the juice a good stir and drink straight away or store in the fridge for up to 24 hours.
*Yield will depend on the efficiency of your juicer and the size of your vegetables.
And there you go – it’s a glass full of goodness! If you like to drink your juice with a straw, get yourself some reusable ones. Saves you all the plastic.
