During our Sunday night dinner Daniel and I usually take a moment to chat about the week that’s ahead. We go through our schedule and plans, making sure we keep some slots open for family time and social hangouts. Last Sunday I thought this moment would also be a good time to tell each other what we would like to get out of the coming week. A way to be intentional about our time and maybe set a small goal for the coming days. Daniel was up for it so we’ll give this a try! I said:
“I want to make an effort to eat more greens again.”
I always find it easier eating healthy during the warmer months of the year. We naturally want to eat a bit lighter, drink lots of water and there’s lots of fresh & delicious produce available. Now that it’s getting cold out and holiday season is upon us, I find it definitely harder to stick to eating fresh food, as the sugary treats and heavier comfort meals are calling. Yet it is probably the most important time of the year to really nourish our bodies I had been pretty good at getting my greens in but lately I found myself reaching for unhealthy processed snacks a little more than I’d like.
It’s time for a bit of a reset.
In the months after Eleanor was born I made myself this green smoothie everyday. As a breastfeeding mum you can be hungry ALL the time, and you need all the nutrition you can get. Yet it can be challenging to find the gaps to make yourself some proper food. That’s where this recipe was a lifesaver. It only takes a few moments to throw together & it’s packed full of nourishing ingredients. Perfect way to get some daily greens back into my life!
This smoothie contains avocado, coconut and spinach: it’s little sweet and very creamy. Ginger is a great ingredient during these winter months for some help during flu season. Flaxseeds provide it with omega 3’s and extra fiber. I make this one with an immersion blender which rinses right off (so no extra clean up required), but any blender will work. Drink it for breakfast or lunch, or if you’re like me and you can use some extra nutrition, as a snack in between meals.
It’s easy on the go food, so perfect to take along when you go out. I simply pour mine in a glass jar – no need to get some fancy smoothie bottle. Maybe the best thing about this smoothie is that it totally satisfies me for a while and takes away any cravings for processed sweets. Win win.
So I’m going to be drinking this to get ready for this winter season and give my body that extra little support. It’s one of the ways I’m adding those greens back in my every day life!
Prep: 5 min – Yield: 1 big serving or 2 smaller servings
- 1 banana
- 1/2 avocado
- 1/2 cup cup full fat coconut milk
- 1/2 cup water
- small piece of fresh ginger
- 1 tbsp flaxseeds
- juice of half a lemon
- 2 big hand fulls of fresh (baby) spinach
- Add all ingredients to your blender and mix until smooth. If using an immersion blender, add the spinach after blending up the other ingredients for a quicker and smoother result.
- Pour into glass, jar or bottle and drink!
If you like a more liquid smoothie you can add some water or extra coconut milk.
Add some oats for a more filling breakfast or some (frozen) mango for some extra tangy sweetness.
