Grilled Courgette with Whipped Feta & Roasted Tomatoes

August is the peak of summer when it comes to all the beautiful seasonal produce that’s available. Now that we have our own vegetable garden, this seasonality is even more visible, as everything has just exploded into growth! Today I’m sharing a delicious recipe with you that makes the most of some of these tasty summer vegetables. A gorgeous dish of grilled courgette with whipped feta & roasted tomatoes – it’s pretty much summer in a bowl!

When we first started our community vegetable garden, I had no idea that things could grow so quickly…This was at the beginning of July: a tiny little courgette plant in our newly started allotment garden…Well, look how things have changed! Can you even believe it? In the course of just a few weeks, these small seedlings grew out to big, voluminous plants that are continually producing lots of fresh, tasty courgettes. There’s an abundant supply of courgettes EVERY SINGLE DAY and so we’ve been enjoying them on most days (good thing we love our courgettes!).

I started looking for new ways to prepare this humble veg. And today I’ve got the most delicious recipe for you – I literally started smiling from ear to ear when I put that first bite in my mouth! Pretty much the yummiest thing I’ve eaten in a while. It is summer in a bowl and couldn’t be more tasty: grilled courgettes with whipped feta and sweet, juicy roasted tomatoes. Add in some garlic, fresh herbs & lemon and we’re in heaven. And you heard that right, whipped feta. If you haven’t tried that yet, you’ll definitely want to! It’s delicious.

It’s a very easy meal to prepare and doesn’t require much hands on time. The oven does all the work for those delicious roasted tomatoes, the whipped feta only takes minutes to make in a food processor and all you need to do is grill some lovely courgettes. Easy peasy and very enjoyable.

This bowl of grilled courgette with whipped feta & roasted tomatoes is perfect as a summer’s lunch served with some bread. Or share it as an appetiser before a meal with friends. It would work perfect as a side to a bbq too, and I can imagine it even as part of a brunch table!

This dish makes the most of the seasonal vegetables that are around at this time of year. I highly suggest you try this out now when these veggies are at their very best – ripe, juicy & flavoursome. It simply won’t be the same with greenhouse veggies, but still give it a shot if that’s all you have available to you!

Grilled Courgette with Whipped Feta & Roasted Tomatoes

A delicious dish that makes the most of the beautiful summer vegetables that are around! Grilled courgettes, roasted tomatoes and whipped feta – it's summer in a bowl!

  • 500 grams mixed cherry tomatoes
  • 2 garlic cloves
  • 200 grams feta drained
  • olive oil
  • 2 tbsp water
  • 2 small courgettes (or one larger one)
  • juice of half a lemon
  • fresh herbs like oregano and thyme optional
  • sea salt & pepper

To serve:

  • toasted bread, flatbread, additional veggies


  • Preheat your oven to 350F/180C. Rinse your tomatoes and add them to a baking dish. Crush the 2 cloves of garlic over the tomatoes. Drizzle with some olive oil and season with a little sea salt. Toss and roast in the oven for about 30 minutes until soft and caramelised.
  • In the meantime, add the feta cheese, 3 tbsp olive oil and 2 tbsp water to a food processor. Mix until combined and creamy – you can add a little extra water if needed to loosen the consistency.
  • Wash and slice your courgettes in thin, even slices. Drizzle them with some olive oil and season with salt and pepper. Heat up a griddle pan and grill the slices on both sides. Remove from pan and sprinkle with some fresh lemon juice.
  • To serve, scoop the whipped feta into a deep dish and even out with the back of a spoon. Add the slices of grilled courgette and the roasted tomatoes on top. Drizzle with some more olive oil, add fresh oregano or thyme (if using) and finish with some cracked black pepper. Enjoy straight away!


  • Save any leftovers for up to three days in the fridge. 
  • This will serve 2 generous lunch portions or make into a sharing appetiser or side dish for 4 people.
